Jo**** Posted October 9, 2022 Posted October 9, 2022 The way I make it is as follows: Cream the butter/margarine/fat and caster sugar together til light and fluffy. Beat the eggs together with vanilla extract/essence and mash the banana. Fold in the egg and mashed banana bit by bit with the flour and baking powder til it's all used. It's best to save a bit of flour back til the end in case the mix curdles. Pour into your prepared cake tin and place on the middle shelf of a pre-heated oven for 30 mins or until a skewer inserted into the middle of the cake comes out clean.
